Drying Herbs the Way My Mother Did

My mother had bundles hanging from every beam in the pantry. The whole house smelled like thyme from August to Christmas.

What I do

  1. Cut herbs in the morning, once the dew has dried, ideally before they flower.
  2. Shake off any dirt. Rinse only if needed, and pat them completely dry.
  3. Tie five to ten stems together with kitchen string.
  4. Hang them upside down somewhere warm, dry and airy, out of direct sun.
  5. After one to three weeks, when the leaves crumble, strip them into airtight jars.

Best for: rosemary, thyme, oregano, sage and dill. Soft herbs like basil, mint and parsley hold more water and do better frozen.

June's tip: store the leaves whole and crush them only when you cook. They keep their flavor much longer.
